Peaches are still available in some states through mid-September. Some grocery stores are still displaying fresh peaches in the produce section and some farmer market stands are still selling them. Here is a very basic peach recipe from The Culinary Institute of America Cookbook. Yes, it’s from the CIA but it is simple.
Grilled Peaches with Ice cream and Raspberry (or strawberry) Coulis
Ingredients
4 peaches
1/4 c granulated sugar
2 Tbsp lemon juice
4 c French vanilla ice cream
1 c Raspberry Coulis
Directions
Pit peaches and cut into ½ inch thick slices
Preheat gas grill to high. (If charcoal grill build fire then let it burn down until coals are glowing red with a light coating white ash, even out coals and clean grate.)
Toss peaches with sugar and lemon juice.
Grill over direct heat until tender in the middle about 2 to 3 minutes per side.
Dish out ice cream and top with the peaches
Raspberry Coulis (Optional)
Grilled peaches over ice cream make a nice dessert but if you want a sauce, add a berry coulis
Ingredients
1 c fresh or frozen raspberries or strawberries
½ c granulated sugar
1 Tbs lemon juice
Directions
Combine coulis ingredients
Simmer in a saucepan and stir until sugar dissolves
Strain through a fine mesh sieve
Add more sugar or lemon juice if desired.
Serve as a sauce for the peach-ice cream dessert.
